Meet Your Instructors

Petra Knapp’s cooking is rooted in place, shaped by local, and seasonal ingredients in ways that reveal where they came from rather than disguising them. Petra works with thoughtfully grown and foraged ingredients and explores food as both nourishment and art through open-fire cooking, fermentation, leaf-wrapping, seasonal preservation, and the use of flowers, herbs, leaves, fruit, seeds, and other edible botanicals for flavor and presentation. Her work is ultimately about connection to place: learning from the land, working with the materials it provides, and collaborating with growers, winemakers, and artists who are similarly inspired by the landscapes of the Gorge. Molly Holmlund is an artist, ink maker, and educator whose work is rooted in the plants, minerals, and changing colors of the Columbia River Gorge. She forages natural materials from the landscape and transforms them into handmade inks and pigments. Her practice explores the space between art and ecology, allowing the qualities of each material to shape the work. Through making and teaching, Molly uses color as a way to cultivate curiosity, connection, and a deeper relationship with place.

Bethany Kimmel is the grower and winemaker behind The Color Collector, a small-production wine project rooted in the Columbia Gorge. Drawn to wine as an expression of place, she works with grapes in a way that preserves the character of the vineyard, season, and landscape. Her approach is gentle and minimal, using native fermentation and traditional methods to let the fruit speak for itself. Through The Color Collector, Bethany explores wine as a reflection of agriculture, time, and the living landscape of the Gorge.
